Detox Salad
Prep Time: 10 minutes
Serves: 2
This salad is refreshing, cleansing and great to restart your week. I always like to have my protein prepped for the week to add to this for a work lunch.
Salad:
2 cups kale, thinly sliced (Trader Joe’s has organic all cut up)
1.5 cups broccoli florets
2 large carrots, peeled and grated
2 small beets, washed and grated
1 avocado, peeled and diced
1/2 cup fresh cilantro, chopped
½ cup sunflower and or pepita seeds
Optional protein addition (4-6 oz Grass Fed skirt steak, 2 eggs, 1 chicken breast, 4- 6 oz wild fish, canned wild sardines/wild salmon)
Dressing:
1/2 cup MCT oil
⅓ cup lemon juice, fresh
1 tablespoon ginger, peeled and grated
1 Tablespoon whole grain mustard
1 teaspoons pure maple syrup/ raw organic local honey (optional)
1/4 teaspoon salt, add more to taste
Instructions for smoothie:
For dressing either whisk together all ingredients or put everything in a small blender and set aside until ready to use.
Optional step for kale sensitive people: Lightly steam kale / and or broccoli in a pan for about 2 minutes with a little water (this helps break down kale) and then strain excess water out, pat down.
Add rest of ingredients to bowl, add dressing.
Top with protein of choice if using.

Risotto is a classic and if you use nutrient dense ingredients then it can be a healthy and satisfying meal. The key to risotto is continuous stirring which releases starch from the rice and creates creaminess. I love this recipe on a cool night.

These soup recipes can be made seasonal, in the summertime with tomatoes, and they all have very similar methods and can be made in less than 30 minutes. Sometimes I will add some sautéed ground meat and a handful of greens to the blended soup if I’m feeling hungry. Remember, starchy veggies (like winter root veggies) have higher carbs and sugar, so you will want to use less of them and mix them with more fat. On the other hand, tomatoes and zucchini are watery. Remember you can always add more broth, water, or cream, but it is best to start with less liquid and add more as you go and as you taste; you can’t take it away once it has been added.
