Strawberry Moringa Mint Smoothie

This low sugar, keto (high-fat) smoothie is my all time favorite during summertime. When I see strawberries at the market I will freeze half for when I want to make a quick smoothie lunch or snack. Because of the healthy fats from the coconut, MCT oil and chia seeds, this smoothie keeps you full and satisfied. Cauliflower and or avocado is my secret to a creamy consistency without the high sugar and carb from the traditional banana used in most smoothie recipes. Unfortunately, most smoothies you get a juice bars (yes even organic vegan ones) are packed with sugars. Natural sugars still affect our blood sugar ,so try to become more aware of you overall daily sugar consumption. Personally I like to save my sugar for things like Thrive Market organic vino and maybe some dark chocolate after dinner.

Why Moringa?

Moringa is a “superfood” due to this plants healing abilities. I have used for many years due to the fact that it has been proven to help with over 200 different illnesses. A little goes a long way, with 27 vitamins and about 46 antioxidants, you just might want to up your game by boosting your food with moringa!

Moringa has been nicknamed the ”miracle tree’ for a good reason. All parts of the moringa plant are beneficial but the most powerful are the seeds (pods) and leaves. Its antimicrobial, anti-inflammatory and rich in antioxidants, plus it tastes pretty dang good. Rich in iron, vitamin c, potassium and and vitamin A, some say it might be the most nutrient rich per gram than any other plant (crazy right!). It is helpful in lowering blood sugars ( I have used it a lot in my Mexican patients because it is cheap and does a really good job), helping diabetes, weight loss and overall inflammation. Add it your water, teas, matcha, soups, salad dressing, desserts and smoothies.


Prep Time: 10 minutes
Serves: 2

Ingredients: 

  • 1.5 cup frozen strawberries

  • 1.5 cup full fat unsweetened coconut

  • 1 tablespoon chia seeds (soaked in blender with milk for 10 min)

  • 1/4 cup fresh mint ( you can also substitute 1/4 tsp organic peppermint oil)  

  • 1/2 stevia powder  or 15-20 drops liquid stevia 

  • 1 cup frozen cauliflower rice

  • 1 tablespoon moringa powder ( I use Kuli Kuli)

  • 1 tablespoon Brain Octane oil (15% off now)

  • optional additions: 1 -2 tablespoons collagen, 1 scoop vanilla protein powder, cinnamon, vanilla extract, turmeric, and/or coconut butter

Instructions for smoothie:

Add coconut milk and chia seeds to the blender and let soak for 10 minutes . Put the rest of the ingredients in blender and blend. Top with mint and moringa to make it extra pretty :)

Note: Do not blend collagen in, just pulse to mix.
